Recipe 1 - Buckwheat flour idli /kuttu aata idli
Ingredients :
Buckwheat flour -1 cup
curd - 1/3 cup
Baking soda 1/4 tsp
Rock salt 1 tsp
Green chilli chopped - 2
Vegetable oil - 1-2 tsp
Curry leaves - 10-12
Sesame seeds -1/2 tsp
Procedure
Make a batter by mixing the flour ,curd,baking soda ,salt and a little water
Set aside and let it rest for 10 minutes
Now grease the idli container and pour the batter , steam it for 10 minutes.
Prepare a tempering with curry leaves, chopped green chillis and sesame seeds
Take out the idlis and add the tempering to it .
Serve it with a coconut chutney by side
Recipe 2 - dry fruit and foxnut brittle
Foxnuts - 150 gm
Cashew - 25gm
Melon seeds -100gm
Grated coconut - 50gm
Almonds sliced - 25gm
Palm jaggery/coconut jaggery -200 gm
Ghee -2 tbsp
Method-
Toast the cashew,almond,melon seeds ,fox nuts and coconut in a thick bottom pan with ghee
Let them cool and then coarsely chop them
Prepare a jaggery syrup by cooking the jaggery with a little water and cook till 1 strand of consistency is achieved.
In a flat tray add the toasted nuts and pour the syrup on top and let it set
Once set cut in even squares and enjoy!
Recipe 3- Fasting Drink:Superfood smoothie
Soaked chia seeds/ sabja seeds - 1-2 tbsp
Coconut milk - 200ml
Banana - 1
Papaya ripe diced- 1/2 cup
Toasted almond -2 chopped roughly
Toasted walnut -2 chopped roughly
flax seed powder- 1/2 tsp
Ice cubes -6-8
Fresh blueberries- 5-6
Strawberry -2 sliced
Method-
In a blender add all the ingredients along with ice and blend till smooth
Garnish with fresh berries and serve
